My Favorite Crock Pot Recipes. A must for the home schooler!

During the school year, let's admit it, time is valuable.   Who has time to slave in the kitchen when there are lessons to do, house work to do, errands to run and kids home school group and activities to get to?

I need my crock-pot.   Can't survive without one during the busiest of days.

The following are my favorite easy, cook all day and save you time recipes.  Taste tested by my darling family.

4 boneless, skinless chicken breasts
1 cup salsa
1 package reduced sodium taco seasoning
1 can reduced fat cream of mushroom soup (condensed)
1/2 cup reduced fat sour cream
Add chicken to slow cooker. 


Sprinkle taco seasoning over chicken.
Pour salsa and soup over chicken.
Cook on low for 6 to 8 hours.
Remove from heat and stir in sour cream.


serve with rice. 










Bacon Ranch Chicken
4 boneless skinless chicken breasts
2 tbsp real bacon bits
1tsp minced garlic
1pkg ranch dressing mix
1 can cream of chicken soup
1 cup sour cream
egg noodles

combine bacon, garlic, ranch dressing mix, soup, and sour cream; mix well. Pour over chicken in the crockpot. Cook on high 3-4 hours. I then shred the chicken and put back in the pot and add the egg noodles; mix together









Easy Roast Beef- one of our family favorites!
1 roast
1 can of coca cola (really!)
1 package of lipton's onion soup mix

Put roast in crock pot (mine is usually frozen), then onion soup mix, and then pour the coke over it. Cook on low around 8 hours (I usually add carrots and potatoes 3-4 hours before dinner). You can even make gravy with the leftover liquid. Enjoy!







To Die For Crock Pot Roast

1 (4-5 lbs) beef roast, any kind
1 package brown gravy mix, dry
1 package Italian salad dressing mix, dry
1 package ranch dressing mix, dry
1/2 C water

*Place beef roast in crock pot
*Mix the dried mixes together and sprinkle over the roast
*Pour the water around the roast
*Cook on low for 7-9 hours





Southern Pulled Pork

2 T. Vegetable oil
1 (3.5 lb) pork shoulder roast
Garlic salt
Lemon pepper
1 bottle (12 oz) chili sauce
3 packets (1.31 oz each) sloppy Joe mix
1/2 c. Low sodium beef broth
Hamburger buns

Heat oil in large skillet over medium-high heat. Season pork with garlic salt & lemon pepper. Brown on all sides. Place in crock pot.

In a small bowl, combine chili sauce, sloppy Joe mix, and broth. Pour over roast.

Cover & cook on low heat for 7-8 hours or high for 4 hours. Shred pork & place on buns.







Crock Pot Pork Chops
4 boneless pork chops
1 can cream of mushroom
1 pkg limpton onion soup mix
1 onion
Salt and pepper to taste
2 soup cans of water

Put soup and water in pot,add onion and chops then add soup mix over top. Cook on high 4 hours.





Apricot Glazed Pork Roast:

1 can chicken broth
1 jar (18oz) apircot perserves
1 Lg. chopped onion
2 Tbls dijon mustard
4 Lb. boneless pork loin roast

Mix both, preserves, onion and mustard in a slow cooker Add pork and turn to coat. Cover and cook on LOW for 8-9 hrs.

*For a thicker sauce, after cooking the pork roast, remove from the cooker. Mix in 2 Tbls of cornstartch and 2 Tbls of water. Stir into slow cooker. Cook this on HIGH for 10 minutes or until the mixture boils and sauce thickens. Serve with mashed potatoes :)







Taco Soup
2 cans kidney beans
2 cans corn
2 cans black beans
1 can Chick Peas
1 can Pinto Beans
2 Taco seasoning packets
Pour all into CP and stir and cook on high for 2hrs or low for 4hrs..
You can also add Hamburger meat or Ground Turkey meat....its a wonderful cool weather meal







reen chili chicken soup

4 large chicken breast boiled and shredded
2 cans schwans chicken broth
2 cans cream of chicken soup
1 can cream of celery soup
1 small onion (chopped)
6 tbsp butter
1 pint half and half
1 1/2 tsp dry basil
1 1/2 tsp dry parsley
1 tsp salt
1/2 tsp cumin
7 oz. Can of chopped green chilies (I use two 4.5 cans, but we think the hotter the better)
6 tbsp. Flour

Boil chicken and set aside to cool. When cooled, shred into pieces. Meanwhile, melt butter and add chopped onion. Cook until onion is clear. Add flour and stir well. Cook until thick. Put remaining ingredients, including chicken into a crock pot. Add onion mixture and simmer on low for 4 hours.





After Hours Soup
1 pkg. (16oz.) Italian Sausage, cut into bite size pieces
2 cups diced potatoes
1/2 cup cooked and crumbled bacon
1 can (14.5 oz) diced tomatoes
4 cups chicken broth
2 tsp. chopped garlic
1 packet Hollandaise sauce mix, Knorr brand
4 eggs scrambled eggs
Salt and Pepper
2 cups large croutons
Tabasco sauce, optional

In a 4 quart slow cooker, combine sausage, potatoes. bacon and tomatoes.
In a medium bowl, whisk together chicken broth, garlic and Hollandaise sauce mix. Pour into slow cooker and stir thoroughly. Cover and cook on HIGH setting for 4 hours.
Slowly stir in scrambled eggs and adjust seasoning with salt and pepper.
Top with croutons and serve hot with Tabasco sauce if desired.





Crock Pot Lasagna: Brown Together: 1 1/2 lbs Hamburger, 1 med onion, chopped, 1 t minced garlic. Drain and put back into skillet. Add: 5 cans tomato sauce (Italian and Herb), 1 can tomato paste, a can water, 1 t. dried oregano. Heat thoroughly. In crock pot or slow cooker, layer sauce, lasagna noodles (uncooked), mixture of monterrey jack and parmesian cheese. (You will need about 5 cups shredded monterrey jack) 1 small carton cottage cheese( 2 or 3 spoons between layers), Keep layering, ending with sauce. Let cook for 4 to 5 hours on low. Top with parmesian cheese on top, if desired. Eat and enjoy!






Crock Pot Enchiladas

1 1/2 lbs. hamburger meat
1 large onion
1can cheddar cheese soup
1 can cream of mushroom
1 can golden mushroom soup
1 can red enchilada sauce
1 small can chopped green chilies
12 corn or flour tortillas

Brown meat and onions in skillet and drain. Put in CP with all other ingredients except tortillas. Cook 4 hrs. on HIGH or 8 on LOW. One hour before done, tear up tortillas and add to pot. Enjoy! They are delish!







Beef Burgundy

One pkg stew meat
3 cans of mushroom soup
3/4 can red cooking wine
Salt and pepper to taste

Method;
Place all ingredients in crock pot, cover, and cook on low about 6 hours. Serve over egg noodles. Yum!!

Hint:
If not thick enough, make a roux of melted butter ( about 1/2 Tbsp) and a little flour to make a soupy paste. Stir in to cooked mixture. You don't need a lot. Should thicken it a bit.
Garlic Lime Chicken
5 chicken breast halves
1/2 C soy sauce
1/4 C. lime juice
1 Tbs. Worchestershire sauce
2 garlic cloves, minced
1/2 tsp. dry mustard
1/2 tsp. ground pepper
cook on high 4-6 hours or on low 6-8 hours.
